The cod salad with dehydrated organic green kiwi is not a salad like all the others: it provides unusual ingredients, a simple preparation that keeps intact all the nutrients and results in a good, beautiful and very colourful dish!
From a nutritional point of view, cod has a protein content well above the average fish, it is low in fats, with the exception of omega-3 fatty acids (useful for the cardiovascular system) and rich in minerals.
Zucchini and green kiwis are rich in fibres, vitamins and minerals, and have a negligible caloric intake.

These are the ingredients used to prepare the cod salad with dehydrated green kiwi:
- 30 g Dehydrated green kiwi Vitaina
- 500 g Cod fillet
- 150 g Mixed salad
- 2 Zucchini
- 10 Mint leaves
- Extra virgin olive oil
- Salt
What to do to prepare the cod salad with dehydrated green kiwi:
To prepare the salad, wash the mint and mixed salad, then dry them both well.
Wash the zucchini and cut them into chunks.
Fill a pot with water and place the steamer basket (with lid) on top.
Then pour the zucchini into the basket and steam them for 15 minutes over medium heat.
In a second pot pour 2 inches of water, place another basket and inside this one the cod.
Cover with the lid and steam for 8 minutes. When the cod is ready, cut it into chunks.
Meanwhile, soak the kiwis in a bowl of water to rehydrate them slightly.
Then take a blender and pour inside the mint, zucchini, a little bit of salt and 3 tablespoons of extra virgin olive oil.
Blend everything until you obtain a uniform cream.
Now all that remains is to compose the salad.
Place the mixed salad on the bottom of a bowl, then add the slightly rehydrated kiwis and the chopped cod.
Stir gently, then dress up with the zucchini and mint sauce.
