Ingredients for Dehydrated Pineapple and Carrot cake bites

Oat Flakes
Sunflower seeds
Medjool Dates
Vitaina organic dehydrated pineapple
Cinnamon and spices
Organic lemmon zest
Dehydrated coconut

How to prepare dehydrated pineapple bliss balls

The basis for these carrot cake bites are medjool dates, oil seeds or nuts and fresh grated carrots. To these few ingredients I added oat flakes, spices, Vitaina organic dehydrated pineapple and lemon to get that typical carrot cake flavor , but without using the oven!

The recipe is really easy and only requires the use of a food processor or blender and a grater .

Remove the stone from the medjool dates and grate the carrots.
Combine all the ingredients and blend until you get a soft, fairly homogeneous and moist dough. This will take a couple of minutes or so.
Transfer to the refrigerator and let it cool for 5-10 minutes (recommended).
Take the dough and roll it in your hands into balls. Then roll the bliss balls in the chopped dehydrated coconut. 

Repeat until you have used all the dough. The children will be happy to help you with this step!
