Apple pie is a great pastry classic: this revisited version is really special, able to make you make a good impression with your guests or liven up your everyday snack and breakfast! Above all, this pie with dehydrated apples is a very simple cake to prepare.

The dough is made from a base of whipped eggs and sugar to which flour is added. Then, butter and honey are added to flavour. Finally, a mixture of dehydrated apples and nuts is added. This gives the cake a full-bodied flavour!

With Vitaina’s dehydrated apples, we are sure to make a healthy cake, because the dehydration is achieved through the patented Soft-DRY® process that gently removes the water from the apples, without adding preservatives or additives, while keeping the nutritional properties of the fresh fruit intact.

Here is the recipe for a soft cake with dehydrated apple and walnuts:

Ingredients 

  • 250 g double zero flour
  •  140 g clarified butter
  • 70 g Vitaina’s dehydrated apples
  • 200 g brown sugar
  • 100 g walnuts for the mixture + 40 g for decoration
  • 2 eggs
  • 2 tbsp. raisins
  • 150 ml apple juice
  • 100 g acacia honey
  • 60 g potato starch
  • 1 packet of yeast
  • Icing sugar to taste
  • salt to taste

How to prepare dehydrated apple pie:

To prepare the soft cake with dehydrated apples and walnuts, start by soaking the dehydrated apples in apple juice for about half an hour.

Do the same with the raisins using lukewarm water.

Now place the apples on a chopping board and dice them, then place them in a bowl together with the well-drained raisins and the chopped walnuts.

Melt the butter and honey in a saucepan, stir with a whisk and leave to cool.

In a separate bowl, mix the eggs with the brown sugar and whisk until frothy.

Then gradually add the flour and potato starch sifted with the baking powder.

Add a pinch of salt and gently stir the mixture from the bottom upwards.

Now add the honey melted with the butter, mix and knead well.

Finally, add the mixture of nuts, sultanas and apples, mixing thoroughly.

Then grease a 24 cm baking tray and spread a thin layer of flour over it.

Place the prepared mixture on a baking tray, flatten with a spatula and bake in the preheated oven for 40 minutes at 170 degrees.

Do the toothpick test before taking the cake out of the oven: insert a toothpick, if it is wet then the cake needs a few more minutes.

Once cooked, allow the cake to cool for 15 minutes, then turn out onto a large tray.

Finally, sprinkle with icing sugar, decorate with walnuts and serve!
