Thumbprint cookies are shortbread from Sweden, where they are called Hallongrotto, literally raspberry cave (because of their filling).
Here, children often bake them with their mothers for Santa Claus and leave them on a saucer with a glass of milk on the night of December 24.
Their name comes from the fact that in the center of the cookie is created a hollow with the thumb (thus leaving the imprint) which will then be filled with fruit, cream, jam ….
We decided to fill them with Vitaina dehydrated strawberries.
Ingredients for about 20 cookies
250 g spreadable cheese
125 g butter at room temperature
155 g sugar
1 sachet of vanillin
250 g flour 00
75 g white chocolate
In a bowl mix the cheese with the butter and sugar until smooth and creamy.
Add the vanillin and flour and continue to mix.
Prepare a baking tray with a sheet of baking paper.
With the help of some more flour create some small balls, crush them in the middle with a finger to create a small hollow.
Place the cookies in the oven (preheated to 150°C) for 15 minutes until lightly browned.
Once cooled you can decorate them in this way: rehydrate part of the strawberries with a little warm water and blend them briefly, until you get a creamy mixture that you will insert in the hollow. Add the remaining dehydrated strawberries and the white chocolate glaze on top.
And be sure not to eat all the cookies: remember to leave some for Santa!
