Summer is coming, and with it rice salads: healthy, colourful and very fresh!
We offer you a vegetarian version, rich in vitamins and minerals, very useful for a balanced diet, which fights the exhaustion caused by the summer heat.
At the end of the preparation, we added Vitaina dehydrated melon, which gives the salad an unmistakable aroma, and above all provides a high amount of Vitamin A, Vitamin C and potassium.
These micronutrients are not affected by the gentle cold dehydration process, which maintains all the characteristics of the fresh fruit.
In addition, Vitaina melons come from local organic crops, which do not contain chemical fertilisers, ensuring that the fruit is truly healthy.
Heat plenty of salted water in a saucepan and cook the rice for the minutes indicated on the packet.
Meanwhile, heat a little oil in a frying pan.
Cut all the vegetables into cubes and sauté for 10 minutes.
Add salt and pepper to taste.
Once the rice is ready, cool it under running water.
Add the vegetables and dehydrated melon. Dress the rice salad with a little oil, salt, pepper and basil leaves.
